 * 500g low-fat quark (Magerquark)

 * 4 large eggs

 * 60g (approx. 2 oz / 1/2 cup) shredded mozzarella

 * 30g (approx. 1/4 cup) grated Parmesan cheese

 * Preheat Oven & Prep Dish: Preheat your oven to 200°C / 400°F. Lightly grease a medium-sized baking dish (approx. 9x13 inch or similar) with 1 tbsp olive oil.

 * Make Quark Mixture: In a large bowl, whisk together the low-fat quark, eggs, and shredded mozzarella until well combined. Season with salt and pepper to taste.

 * Layer the Bake:

   * Arrange about half of the softened zucchini slices to line the bottom of the prepared baking dish.

   * Spread the fresh spinach leaves evenly over the zucchini.
