 * Prepare Onion Shells: Cut off both ends of the onions, but keep them mostly intact. Make a single vertical cut from top to bottom, cutting into the center but not all the way through. [1, 2]

 * Cool & Separate: Remove onions from boiling water and immediately transfer them to an ice water bath or let them cool on a cutting board for at least 10-15 minutes. [1, 2] Once cool enough to handle, carefully peel off the outer layers to create individual "cups" or shells. You'll likely get 2-3 usable large shells per onion. Finely chop any smaller inner onion parts and set aside (you can add these to the omelet mix for extra flavor!).
