π Ingredients: • 1 lb (450g) ground chicken
• 1 egg
• ¼ cup breadcrumbs
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, minced
• Salt & pepper to taste
• 1 tbsp olive oil
• 1 can (14 oz) coconut milk
• 2 tbsp red curry paste
• 1 tbsp soy sauce
• 1 tsp brown sugar
• Juice of ½ lime
• Fresh chopped cilantro (garnish)

1️⃣ Mix chicken, egg, breadcrumbs, garlic, ginger, salt & pepper.
2️⃣ Form into 1-inch meatballs.
3️⃣ Brown meatballs in olive oil over medium heat.
