Lemon-Garlic Baked Cod with Pine Nuts and Parsley


Flaky cod, zesty lemon, garlic, and crunchy pine nuts!


Ingredients:


• 4 cod fillets (about 1 pound)


• 2 cloves garlic, minced


• 1 lemon, juiced


• 2 tablespoons olive oil


• 1 teaspoon dried oregano


• 1/2 teaspoon dried thyme


• Salt and pepper to taste


Instructions:


1. Preheat your oven to 400°F (200°C).


2. Pat the cod fillets dry with paper towels.


3. In a small bowl, combine the minced garlic, lemon juice, olive oil, oregano, thyme, salt, and pepper.


4. Pour the mixture over the cod fillets, ensuring they are evenly coated.


5. Place the cod fillets on a baking sheet lined with parchment paper.


6. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
