π Ingredients
- 2 salmon fillets (approx. 150 g each, skin-on or off)
- 2 cups fresh spinach
- 1 small zucchini, sliced
- 10 cherry tomatoes, halved
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt & pepper, to taste
- Optional: 30 g shredded mozzarella or parmesan (for a cheesy finish)
π₯ Instructions
- Preheat oven to 200°C (390°F).
- Season the salmon with salt, pepper, lemon juice, and a drizzle of olive oil.
- On a baking sheet, place:
- Zucchini slices and cherry tomatoes
- Place salmon fillets on top
- Spread spinach and garlic over and around the salmon
- Drizzle everything with the remaining olive oil.
- Bake for 15–20 minutes until salmon flakes easily and veggies are tender.
- Optional: In the last 5 minutes, sprinkle cheese over spinach for a melted finish.
- Serve hot with a glass of dry white wine, and snap your Insta pic!
