πŸ“ Ingredients

  • 2 salmon fillets (approx. 150 g each, skin-on or off)
  • 2 cups fresh spinach
  • 1 small zucchini, sliced
  • 10 cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt & pepper, to taste
  • Optional: 30 g shredded mozzarella or parmesan (for a cheesy finish)

  1. Preheat oven to 200°C (390°F).
  2. Season the salmon with salt, pepper, lemon juice, and a drizzle of olive oil.
  3. On a baking sheet, place:
    • Zucchini slices and cherry tomatoes
    • Place salmon fillets on top
    • Spread spinach and garlic over and around the salmon
  4. Drizzle everything with the remaining olive oil.
  5. Bake for 15–20 minutes until salmon flakes easily and veggies are tender.
  6. Optional: In the last 5 minutes, sprinkle cheese over spinach for a melted finish.
  7. Serve hot with a glass of dry white wine, and snap your Insta pic!
