INGREDIENTS:

  • For the Burgers (makes 4 patties):

    • 1 lb ground chicken

    • 1 cup fresh spinach, finely chopped

    • ½ ripe avocado, diced

    • ¼ cup red onion, finely diced

    • 2 cloves garlic, minced

    • ¼ cup crumbled feta cheese (optional, but so good!)

    • 1 tsp dried oregano

    • Salt & pepper to taste

  • For Assembly:

    • 1 tbsp olive oil for cooking

    • Large lettuce leaves for serving

    • 1 large ripe avocado, mashed with a squeeze of lime juice

    • Fresh cilantro for garnish

INSTRUCTIONS:

  1. MIX: In a large bowl, gently combine the ground chicken, chopped spinach, diced avocado, red onion, garlic, feta (if using), oregano, salt, and pepper. Do not overmix!

  2. FORM PATTIES: Divide the mixture into 4 equal portions and form into patties.

  3. COOK: Heat olive oil in a skillet over medium heat. Cook the patties for 5-7 minutes per side, until golden brown and cooked through (internal temp 165°F/74°C).

  4. ASSEMBLE: To get the look in the photo, place a cooked patty on a lettuce leaf. Top with a generous layer of mashed avocado, then stack another patty on top. Garnish with fresh cilantro and enjoy!
