π§Ύ Ingredients:
For the Chicken Meatballs:
- 1 lb (450g) ground chicken
- ½ cup breadcrumbs (panko recommended)
- ¼ cup finely chopped fresh cilantro or parsley
- 1 large egg, lightly beaten
- 2 garlic cloves, minced
- 1 inch fresh ginger, grated (or 1 tsp ground ginger)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil (for browning)
For the Coconut Curry Sauce:
- 1 tbsp olive oil or coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1–2 tbsp red curry paste (adjust to taste)
- 1 can (13.5 oz / 400ml) full-fat coconut milk
- ½ cup chicken broth
- 1 tbsp brown sugar (or maple syrup/honey)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp fish sauce (optional)
- Juice of ½ lime
- Fresh cilantro or parsley, chopped (for garnish)
- Black sesame seeds (optional)
For Serving:
- Cooked white or brown rice
π³ Instructions:
1. Make the Meatballs:
In a bowl, mix chicken, breadcrumbs, herbs, egg, garlic, ginger, salt & pepper. Shape into ~20 1-inch meatballs.
2. Brown the Meatballs:
Heat 1 tbsp oil in a large skillet over medium heat. Brown meatballs on all sides (~5–7 mins total). Remove and set aside.
3. Make the Sauce:
In the same skillet, add 1 tbsp oil. SautΓ© onion for 3 mins, then add garlic & ginger. Stir in curry paste, cook 1 min.
4. Simmer:
Pour in coconut milk, broth, sugar, soy sauce, fish sauce (if using), and lime juice. Bring to a gentle simmer.
5. Add Meatballs Back:
Return meatballs to the sauce. Simmer uncovered for 10–12 mins until cooked through and sauce thickens.
6. Serve & Garnish:
Serve over rice. Garnish with chopped herbs, sesame seeds & lime wedge. Enjoy!
