๐ Creamy Spinach-Stuffed Salmon

๐ For the Salmon:
- 4 salmon fillets (~170g / 6 oz each), skinless
- 1 tbsp olive oil (15 ml)
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp ground black pepper
๐ง For the Filling:
- 100g (3.5 oz) fresh spinach
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 100g (3.5 oz) cream cheese
- 60g (2 oz) shredded mozzarella or gouda
- Salt & pepper to taste
๐ณ Instructions:
- Prep the salmon: Make a deep slit in the side of each salmon fillet (creating a pocket). Season with garlic powder, salt, and pepper.
- Sautรฉ spinach: Heat olive oil in a pan, sautรฉ garlic for 30 sec, add spinach, and cook until wilted. Let cool slightly.
- Mix filling: Combine sautรฉed spinach, cream cheese, shredded cheese, salt, and pepper in a bowl.
- Stuff: Fill each salmon pocket with the spinach-cheese mixture.
- Sear + Bake (or pan only):
- Option 1 (best): Sear 2 min per side in a hot oven-safe skillet, then bake at 200°C / 400°F for 10–12 minutes.
- Option 2: Cover pan and cook on medium-low until salmon is cooked through (10–12 min).
- Serve hot with lemon wedges or a side of cauliflower mash or salad ๐ฅ
