One-Pan Lemon Garlic Salmon & Shrimp ๐Ÿค๐Ÿ‹

Ingredients:

  • Protein:

    • 2 Salmon Fillets (6 oz / 170g each)

    • 1 lb / 450g Large Shrimp, peeled & deveined

  • Veggies:

    • 1 bunch Asparagus, trimmed

    • 1 cup / 150g Cherry Tomatoes

  • Sauce:

    • 4 tbsp / 60g Butter, divided

    • 1 tbsp / 15ml Olive Oil

    • 5-6 cloves Garlic, minced

    • ¼ cup / 60ml White Wine or Broth

    • Juice of 1 Lemon

    • Fresh Parsley, Salt & Pepper

Easy Instructions:

  1. Prep: Pat salmon & shrimp dry. Season well with salt & pepper.

  2. Sear Salmon: In a large skillet on medium-high heat, melt 1 tbsp / 15g butter with the oil. Sear salmon for 4-6 mins per side until golden. Remove from pan.

  3. Cook Shrimp & Veggies: Add shrimp to the pan, cook 1-2 mins per side until pink. Remove. Add asparagus & tomatoes and sautรฉ for 3-5 mins until tender. Remove from pan.

  4. Make Sauce: Lower heat. Melt remaining butter (3 tbsp / 45g). Add garlic and cook for 1 minute until fragrant. Pour in wine/broth and lemon juice. Scrape the bottom of the pan and let it bubble for 2 minutes.

  5. Combine: Return everything to the pan. Spoon the delicious sauce all over. Garnish with fresh parsley and serve immediately!
