๐Ÿฝ️ Ingredients (Serves 4):

  • 500g (1 lb) broccoli florets
  • 120ml (½ cup) unsweetened almond milk or light cream (10–15% fat)
  • 60g (½ cup) light cream cheese (or silken tofu for vegan)
  • 30g (¼ cup) grated Parmesan (just enough for flavor)
  • 1 clove garlic, minced or ½ tsp garlic powder
  • 1 tsp Dijon mustard (optional)
  • Salt & pepper to taste
  • ½ tsp paprika or a pinch of nutmeg (optional)
  • Optional: chopped chives or parsley for garnish
  • Optional: spray oil or 1 tsp olive oil for greasing

๐Ÿ”ฅ Instructions:

  1. Preheat oven to 200°C (400°F) and lightly grease a small baking dish.
  2. Steam or blanch broccoli for 2–3 mins, then drain and pat dry.
  3. In a saucepan over low heat, whisk almond milk + cream cheese until smooth. Add garlic, mustard, and seasoning. Simmer gently 2–3 mins.
  4. Arrange broccoli in dish, pour sauce over, sprinkle Parmesan on top.
  5. Bake for 15–18 mins or until slightly golden.
  6. Top with fresh herbs and serve warm!
