INGREDIENTS:

  • 2 Salmon Fillets (6 oz each), patted dry

  • Salt & Pepper to taste

  • 1 tbsp Olive Oil

  • 2 tbsp Butter

  • 4 cloves Garlic, minced

  • 8 oz Mushrooms, sliced

  • 5 oz Fresh Spinach

  • ½ cup Heavy Cream

  • ¼ cup Chicken or Veggie Broth

  • ¼ cup grated Parmesan Cheese

  • 1 tbsp fresh Parsley (or Dill), chopped

INSTRUCTIONS:

  1. SEAR SALMON: Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side up for 4-6 minutes until golden and crispy. Flip, cook for another 3-4 minutes, then set aside.

  2. SAUTร‰ VEGGIES: In the same skillet, melt butter. Add mushrooms and cook until browned (about 5 mins). Add minced garlic and cook for 1 minute until fragrant.

  3. WILT SPINACH: Add the spinach and cook until just wilted (about 2 mins).

  4. MAKE THE SAUCE: Pour in the heavy cream and broth. Bring to a simmer, then stir in the Parmesan cheese until it melts. Season with salt, pepper, and fresh parsley.

  5. COMBINE: Return the seared salmon to the skillet, spooning some of that incredible sauce over the top. Serve immediately and enjoy!
