Salmon & Spinach puff pastry

Spinach & Salmon Puff Pastry Bites with Egg  (Low-Carb, High-Protein)


Ingredients (Makes ~8 pieces):

- 1 sheet puff pastry (thawed; approx. 250g or 8.8 oz)  

- **200g fresh spinach** (or 150g frozen, thawed and drained; approx. 7 oz)  

- **150g smoked or marinated salmon**, thinly sliced (approx. 5.3 oz)  

- **1 garlic clove**, minced  

- **15ml olive oil** (1 tbsp)  

- **Salt & pepper**, to taste  

- **1 egg**, beaten (for egg wash)  

- **8 quail eggs** (or small chicken eggs)  


>> Tip: Using smoked salmon will add a rich depth of flavor without extra calories. If using raw marinated salmon, lightly season and let it rest before assembling.)*  

Instructions:

1️⃣ **Prep the Filling:**  

   Sautรฉ minced garlic in olive oil over medium heat. Add spinach and cook until wilted (or warmed if using frozen). Season with salt and pepper. Let cool slightly.

2️⃣ **Assemble:

   Roll out the puff pastry on a floured surface and cut it into 8 rectangles. You can form small cups or roll them into logs and slice into rounds. Place in a muffin tin or on a baking sheet.

3️⃣ **Fill:

   Spoon the spinach mixture into each pastry piece. Add a slice of smoked salmon over the spinach. Make a small indentation and carefully crack a quail egg on top.

4️⃣ **Bake:

   Brush pastry edges with beaten egg. Bake in a preheated oven at 200°C (400°F) for 18–20 minutes, or until the pastry is golden and the eggs are just set.

5️⃣ **Garnish:

   Sprinkle with cracked pepper and add fresh chives or dill if desired.
