• 450g (1 lb) sea scallops (dry-packed)
• 2 tbsp olive oil
• 2 tbsp unsalted butter
• 2 garlic cloves, minced
• 2 tbsp lemon juice (fresh!)
• 2 tbsp chopped chives
• Salt & pepper to taste
• (Optional) Steamed asparagus + lemon wedges for serving

1️⃣ Prep: Pat scallops dry with paper towels. Season with salt & pepper.
2️⃣ Sear: Heat oil + 1 tbsp butter in a skillet until hot & shimmering.
3️⃣ Add scallops → don’t move! → sear 2–3 min per side until golden.
4️⃣ Sauce: Add garlic → sautรฉ 30 sec. Pour in lemon juice → deglaze.
5️⃣ Turn off heat → swirl in last 1 tbsp butter.
6️⃣ Serve: Plate scallops → spoon sauce → garnish with chives, lemon, & sides.
