- 300g (10 oz) lump crab meat (or mixed seafood)
- 1 tbsp olive oil (15 ml)
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- 2 tbsp tomato paste (30 g)
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 1/4 cup dry white wine (60 ml)
- 2 cups seafood or vegetable broth (480 ml)
- 1 cup heavy cream (240 ml)
- Salt & black pepper, to taste
- Chopped parsley, for garnish
- Optional: lemon juice or zest, for brightness
๐ณ Instructions:
- Sautรฉ aromatics: In a pot, heat olive oil over medium heat. Add shallots and garlic, cook until fragrant.
- Build flavor: Stir in tomato paste, paprika, and cayenne. Cook 1-2 min until paste darkens.
- Deglaze: Pour in white wine, simmer 1-2 min to reduce.
- Add broth & simmer: Pour in broth. Simmer 10 min uncovered.
- Blend (optional): For a smooth bisque, use an immersion blender here.
- Finish with cream: Lower heat and stir in cream. Simmer 5 more min.
- Add crab: Gently stir in crab meat. Warm through without overcooking.
- Serve: Season with salt, pepper, lemon zest, and garnish with parsley.
