๐Ÿงพ Ingredients:

  • 300g (10 oz) lump crab meat (or mixed seafood)
  • 1 tbsp olive oil (15 ml)
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 2 tbsp tomato paste (30 g)
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1/4 cup dry white wine (60 ml)
  • 2 cups seafood or vegetable broth (480 ml)
  • 1 cup heavy cream (240 ml)
  • Salt & black pepper, to taste
  • Chopped parsley, for garnish
  • Optional: lemon juice or zest, for brightness

๐Ÿณ Instructions:

  1. Sautรฉ aromatics: In a pot, heat olive oil over medium heat. Add shallots and garlic, cook until fragrant.
  2. Build flavor: Stir in tomato paste, paprika, and cayenne. Cook 1-2 min until paste darkens.
  3. Deglaze: Pour in white wine, simmer 1-2 min to reduce.
  4. Add broth & simmer: Pour in broth. Simmer 10 min uncovered.
  5. Blend (optional): For a smooth bisque, use an immersion blender here.
  6. Finish with cream: Lower heat and stir in cream. Simmer 5 more min.
  7. Add crab: Gently stir in crab meat. Warm through without overcooking.
  8. Serve: Season with salt, pepper, lemon zest, and garnish with parsley.
