Guacamole + Spicy Shrimp
Spicy Shrimp & Guacamole Bites.
Ingredients:
For the Guacamole:
3 ripe avocados, mashed
1/4 cup finely chopped red onion
1/4 cup chopped cilantro
1 jalapeΓ±o, seeded and minced (optional, for extra spice)
1 lime, juiced
Salt and pepper to taste
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
Salt and pepper to taste
For the Tostada Cups:
Small corn tortillas
Cooking spray or oil
Instructions:
Prepare Guacamole: Combine all guacamole ingredients in a bowl and mix well. Refrigerate until ready to use.
Season Shrimp: Toss shrimp with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
Cook Shrimp: Grill or pan-fry shrimp over medium-high heat for 2-3 minutes per side, or until pink and cooked through.
Prepare Tostada Cups: Preheat oven to 350°F (175°C). Lightly spray or brush tortillas with oil. Drape each tortilla over two bars of your oven rack to create a curved shape. Bake for 5-7 minutes, or until golden brown and crispy. (Alternatively, you can use a small muffin tin and gently press the tortillas into the cups before baking.)
Assemble Bites: Fill each tostada cup with a spoonful of guacamole. Top with 1-2 cooked shrimp and garnish with a sprinkle of cilantro, if desired.
