For the main:
• 4 salmon fillets (170g each)
• 1 lb baby potatoes, halved ๐Ÿฅ”

For the sauce:
• 3 tbsp melted butter ๐Ÿงˆ
• 2 tbsp olive oil ๐Ÿ›ข️
• 2 garlic cloves, minced ๐Ÿง„
• Zest + juice of 1 lemon ๐Ÿ‹
• ½ tsp dried oregano or thyme (optional)
• Salt & pepper, to taste ๐Ÿง‚

1️⃣ Preheat oven to 400°F (200°C). Toss halved potatoes with 1 tbsp olive oil, salt & pepper. Roast 15–20 min.

3️⃣ Add broccoli & salmon to pan. Drizzle with half the sauce.
4️⃣ Roast 10–15 min more until salmon is cooked through & broccoli is tender-crisp.
5️⃣ Finish with remaining sauce & garnish with parsley. Serve hot!
