๐ฃ๐ฅ Cod in Roasted Red Pepper Sauce ๐ฃ๐ฅ๐ถ️
Elegant yet easy – flaky cod in a silky, smoky red pepper cream sauce.

๐ Ingredients (4 servings):
• 4 cod fillets (6 oz / 170 g each)
• 2 tbsp olive oil
• ½ tsp paprika
• Salt & pepper to taste
• 1 tbsp butter
For the Sauce:
• 1 jar (12 oz / 340 g) roasted red peppers, drained ๐ถ️
• 1 tbsp olive oil
• ½ onion, chopped ๐ง
• 2 garlic cloves, minced
• ½ cup (120 ml) chicken or veggie broth
• ¼ cup (60 ml) heavy cream or coconut cream ๐ฅฅ
• 1 tsp smoked paprika
• Fresh parsley or basil ๐ฟ
๐จ๐ณ Instructions:
1️⃣ Sear the Cod: Pat fillets dry. Season with paprika, salt, and pepper. Heat olive oil in a pan, sear cod 3–4 mins per side until golden and flaky. Remove and set aside.
2️⃣ Make the Sauce: In the same pan, heat olive oil + butter. Sautรฉ onion & garlic 2–3 mins. Add red peppers, broth, paprika. Simmer 5 mins.
3️⃣ Blend: Transfer sauce to blender. Purรฉe until smooth. Return to pan. Stir in cream.
4️⃣ Finish: Add cod back to pan. Spoon sauce over and simmer 2 mins. Garnish with herbs.
