Coconut Curry Fish with Zucchini & Rice


*Ingredients:*

- 2 white fish fillets (like cod or halibut)  

- 1 tbsp olive oil  

- Salt & pepper to taste  

- 1 zucchini, sliced  

- 1/2 red bell pepper, sliced  

- 1/2 onion, chopped  

- 2 cloves garlic, minced  

- 1 tsp fresh ginger, grated  

- 1 tbsp curry powder  

- 1/2 tsp turmeric  

- 1 can (13.5 oz / 400 ml) coconut milk  

- Juice of 1/2 lime  

- Fresh cilantro, chopped  

- Cooked jasmine or basmati rice  


*Instructions:*


1. *Season fish* with salt and pepper. Sear in a skillet with olive oil over medium heat, about 2–3 min per side. Remove and set aside.


2. *Sauté onion, garlic, and ginger* in the same skillet until fragrant.


3. Add zucchini and red pepper. Cook 2–3 mins.


4. Stir in curry powder and turmeric. Cook 30 sec.


5. Pour in coconut milk, lime juice, salt to taste. Simmer 5 mins.


6. Return fish to pan. Simmer gently until fish is cooked through (4–5 min).


7. Serve over rice, garnish with fresh cilantro.
