Salt & black pepper to taste
Neutral oil for frying
For the Whipped Feta Dip
200g feta cheese, crumbled
3 tbsp Greek yogurt
1 tbsp olive oil
Zest of 1 lemon π
Black pepper to taste
Toppings & Garnish
Runny honey π―
Microgreens or fresh thyme
Extra panko crumbs, toasted (optional)
Instructions
π₯£ In a mixing bowl, combine the mashed sweet potato, Parmesan, egg, spices, and breadcrumbs. Mix until just firm enough to roll into balls. Chill for 15 minutes.
π§ Meanwhile, prepare the whipped feta by blending feta, yogurt, olive oil, and lemon zest until ultra-smooth. Set aside.
π§€ Roll the sweet potato mixture into small balls and coat lightly in extra panko.
π³ Heat oil in a deep skillet over medium heat. Fry the balls in batches until deeply golden and crispy, about 3–4 minutes. Drain on paper towels.
