๐Ÿ“ Ingredients (Makes ~20 balls)
• 2 medium zucchinis, grated & squeezed dry
• 1 cup (150 g) crumbled feta cheese
• ½ cup (30 g) breadcrumbs (or GF option)
• ¼ cup (30 g) all-purpose flour
• 1 egg, beaten
• ¼ cup chopped parsley (or mint/dill) ๐ŸŒฟ
• Salt & pepper to taste
• Olive oil for frying or brushing if baking

๐Ÿ”ฅ Instructions
1️⃣ Mix: Combine zucchini, feta, breadcrumbs, flour, egg, herbs, salt & pepper in a large bowl. Mix until sticky.
2️⃣ Shape: Form into small balls (1–1.5 inch diameter).
3️⃣ Cook:
To fry: Heat oil in pan over medium. Fry balls until golden on all sides.
To bake: Preheat oven to 375°F (190°C), place balls on lined tray, lightly oil, and bake for 20–25 min until golden.

Serve warm, optionally with yogurt dip or tzatziki!
