📝 Ingredients (2 servings)
- 4 slices white or sourdough bread
- 2 tsp unsalted butter
- 2 tsp Dijon mustard (optional)
- 4 slices of cooked ham
- 4 slices Gruyère or Emmental cheese
- 2 eggs
- Freshly ground black pepper
For Béchamel Sauce:
- 1 tbsp butter
- 1 tbsp flour
- 1/2 cup (120 ml) milk
- Pinch of nutmeg
- Salt & pepper to taste
🍳 Instructions

Make Béchamel Sauce:
In a small saucepan, melt butter. Whisk in flour and cook for 1 minute. Gradually add milk while whisking until thickened. Season with nutmeg, salt, and pepper. Set aside. -
Assemble Sandwiches:
Spread mustard on 2 slices of bread. Add ham and cheese. Top with another slice of bread. -
Grill Sandwiches:
In a pan over medium heat, melt butter. Grill sandwiches for 2–3 min per side until golden brown. -
Top with Sauce:
Preheat broiler (or oven grill). Place sandwiches on a tray, spoon béchamel sauce over each, then top with extra cheese. Broil for 2–3 min until bubbly. -
Fry Eggs:
In a non-stick pan, fry eggs sunny-side-up. Season with pepper. -
Finish & Serve:
Place an egg on top of each sandwich. Serve hot with a side salad or arugula.
