What You'll Need:

For the Quick Ranchero Sauce:

 * 1 tbsp olive oil

 * 1/2 white onion, finely diced

 * 1 clove garlic, minced

 * 1 (400g/14.5 oz) can crushed tomatoes (or diced tomatoes, blend for smoother sauce)

 * 1/2 jalapeΓ±o, finely diced (remove seeds for less heat)

 * 1/2 tsp ground cumin

 * Pinch of dried oregano

 * Salt & black pepper to taste

 * Optional: Pinch of sugar to balance acidity

For the Eggs & Assembly:

 * 4-6 corn tortillas (or flour if preferred)

 * Olive oil or a light spray for tortillas

 * 4-6 large eggs

 * Salt & black pepper for eggs

For Garnishing (the fun part!):

 * Fresh cilantro, chopped

 * Avocado slices or guacamole

 * Crumbled cotija cheese or feta

 * Crema Mexicana or sour cream

 * Lime wedges

 * Hot sauce of your choice!

 * Sizzle the Sauce: Heat olive oil in a saucepan over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and diced jalapeΓ±o, cook for 1 minute until fragrant.

 * Simmer & Season: Pour in the crushed tomatoes. Add cumin, oregano, salt, pepper, and optional sugar. Bring to a simmer, then reduce heat to low and let it bubble gently for 10-15 minutes, allowing flavors to meld. Taste and adjust seasoning.

 * Fry the Eggs: In the same skillet (or a separate one), add a little more oil if needed. Fry your eggs sunny-side up, over easy, or however you like them! Season with salt and pepper.

 * Assemble Your Masterpiece!

   * Place 1-2 warm tortillas on each plate.

   * Spoon a generous amount of warm ranchero sauce over the tortillas.

   * Carefully slide a fried egg on top of the sauce.
