For the Lamb & Asparagus:

  • 4-6 lamb loin chops (about 1-inch thick)

  • 1 tbsp olive oil

  • 1 bunch asparagus, trimmed

  • 2 cloves garlic, minced

  • ¼ cup red wine or beef broth

  • 1 tbsp butter

  • Salt & pepper

For the Cauliflower-Lobster Mash:

  • 1 medium head of cauliflower, cut into florets

  • 1-2 cooked lobster tails (about 100g/4oz meat), chopped

  • 2 tbsp cream cheese or butter

  • 2 tbsp chopped chives or parsley

  • Salt & pepper


๐Ÿ”ช INSTRUCTIONS:

  1. PREP MASH: Steam or boil cauliflower florets for 10-12 minutes until fork-tender. Drain VERY well.

  2. SEAR LAMB: While cauliflower cooks, pat lamb chops dry and season generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear lamb for 3-4 minutes per side for medium-rare. Remove from pan and let rest on a plate.

  3. COOK VEGGIES: Reduce heat to medium. Add the asparagus to the same pan with the lamb drippings. Cook for 4-5 minutes, tossing occasionally, until tender-crisp. Remove from pan.

  4. MAKE PAN SAUCE: In the same hot pan, sautรฉ minced garlic for 30 seconds. Pour in the red wine or broth to deglaze, scraping up any browned bits. Let it bubble for 1 minute, then swirl in the butter until melted.

  5. FINISH MASH: Add the well-drained, cooked cauliflower to a food processor with cream cheese (or butter), chives, salt, and pepper. Blend until smooth. Gently fold in the chopped lobster meat.

  6. PLATE & SERVE: Spoon a generous bed of the cauliflower-lobster mash onto a plate. Arrange the seared lamb chops and asparagus on top. Drizzle everything with that glorious pan sauce. Garnish with more chives and enjoy immediately!
