π Ingredients (Serves 2)
• 1 large white fish fillet (tilapia, cod, sea bass…)
• 1 cup cherry tomatoes
• ½ cup green olives, pitted
• 2 garlic cloves, minced
• 2 tbsp olive oil
• 1 tbsp butter (optional, for richness)
• 1 sprig fresh rosemary
• 2–3 sprigs fresh thyme (+ more for garnish)
• ½ tsp paprika
• Salt & pepper to taste
• Juice of ½ lemon (optional)
• Chili flakes (optional, if you like heat)

π₯ Instructions
1️⃣ Season the Fish
Pat fillet dry. Season both sides with salt, pepper, and paprika.
2️⃣ Sear the Fish
Heat olive oil in a skillet over medium heat. Sear fish 3–4 min per side until golden and cooked through. Remove and set aside.
3️⃣ SautΓ© the Veggies
In the same pan, add butter (if using), garlic, cherry tomatoes, and olives. Cook 3–5 min until tomatoes blister. Add rosemary & thyme.
4️⃣ Deglaze the Pan
Add lemon juice or a splash of water to loosen up all that flavor. Simmer 1 min.
5️⃣ Finish the Dish
Return fish to the pan, spoon sauce over top, and let simmer 1–2 min to absorb flavor.
6️⃣ Serve & Garnish
Top with fresh thyme or parsley. Serve with crusty bread, roasted potatoes, or a fresh salad. π₯π₯
