๐ง Ingredients (2 servings)
- 1 whole sea bream (or similar white fish – ~500–600g / 1.1–1.3 lb), cleaned & scaled
- 2 tbsp (30ml) olive oil
- 1 tsp garlic powder (or 2 minced garlic cloves)
- 1 tsp dried thyme (or 2 fresh sprigs)
- Salt & pepper to taste
- 1 zucchini, sliced
- 1 yellow bell pepper, chopped
- 1 small onion, sliced
- 1 cup (150g) cherry tomatoes
- 1 lemon (half juiced, half sliced for garnish)
- Optional: fresh thyme or parsley for serving
๐ช Instructions
1️⃣ Preheat oven to 200°C (390°F).
2️⃣ Lightly score the fish skin. Season fish (inside & out) with garlic, thyme, salt, and pepper.
3️⃣ Toss zucchini, bell pepper, onion, and cherry tomatoes with olive oil, salt & pepper.
4️⃣ Place fish on a parchment-lined baking tray. Surround with veggies.
5️⃣ Squeeze fresh lemon juice over fish & vegetables.
6️⃣ Bake for 25–30 minutes, or until fish is flaky and skin is golden.
7️⃣ Garnish with lemon wedges and fresh herbs before serving.
