For the savory churro dough:
- 250 ml (1 cup) water
- 50 g (3.5 tbsp) unsalted butter π§
- ½ tsp salt
- 100 g (¾ cup) all-purpose flour
- 2 large eggs
- 60 g (⅔ cup) finely grated Parmesan π§
- ½ tsp freshly ground black pepper
For frying & coating:
- Neutral oil for frying
- 30 g (¼ cup) grated Parmesan
- ½ tsp smoked paprika
For the whipped feta dip:
- 150 g (5 oz) feta cheese
- 60 g (2 oz) cream cheese
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1–2 tbsp milk or cream (to loosen texture)
For topping:
- 2 tbsp hot honey (or honey + chili flakes) πΆ️

Make the dough:
In a saucepan, bring water, butter, and salt to a simmer. Stir in flour all at once and mix over low heat until a dough ball forms. Cool 5 min.Finish the batter:
Beat in eggs one by one until smooth. Mix in Parmesan and black pepper. Fill piping bag with star tip.Fry the churros:
Heat oil to 180°C (350°F). Pipe 8–10 cm (3–4 inch) sticks into hot oil. Fry until golden (3–4 min). Drain.Coat churros:
Mix extra Parmesan + smoked paprika. Toss churros while hot.Make whipped feta:
Blend feta, cream cheese, lemon, and olive oil until fluffy. Add milk for smoothness.Assemble & serve:
Spoon whipped feta into a bowl, drizzle with hot honey. Serve churros warm, dip generously.
