๐ฅ Ingredients
1 medium eggplant
1–2 cloves garlic (minced)
1 large handful spinach
3–4 tbsp yogurt
3–4 tbsp quark
Salt & black pepper to taste
๐ฅ To serve: cucumber sticks & smoked salmon (optional)
๐ฉ๐ณ Instructions
1️⃣ Cook the Eggplant
Pierce with a fork, microwave on high 6–8 min until soft & collapsed. Cool slightly.
2️⃣ Wilt the Spinach
Place in colander, pour boiling water over or microwave 45–60 sec. Squeeze out water & roughly chop.
3️⃣ Combine
Scoop out eggplant flesh into a bowl. Add garlic, yogurt, quark & spinach.
4️⃣ Mash & Mix
Use fork for chunky texture or blend for smooth. Season generously with salt & pepper.
5️⃣ Chill & Serve
Refrigerate 15–20 min. Serve cold with a drizzle of olive oil (optional), cucumber sticks & smoked salmon.
