๐Ÿง‚Ingredients (serves 2)  

Snapper, olive oil, smoked paprika, shallot, garlic, bell pepper, celery, white wine, light cream, mustard, Worcestershire, lemon juice, tomatoes, herbs ๐ŸŒฟ


For the Snapper:
- 2 red snapper fillets, skin-on  
- Salt and freshly ground black pepper  
- 1 tsp smoked paprika  
- 1 tbsp olive oil  

For the Light Cream Sauce:
- 1 tbsp unsalted butter  
- 1 small shallot, minced  
- 2 garlic cloves, minced  
- ½ red bell pepper, finely diced  
- 1 celery stalk, finely diced  
- 1 tsp Creole-style seasoning (paprika, cayenne, thyme, oregano, garlic powder)  
- ½ cup dry white wine or seafood stock  
- ½ cup light cream or oat cream  
- 1 tsp Dijon mustard  
- 1 tsp Worcestershire sauce  
- ½ lemon, juiced  
- Salt and pepper to taste  

For Garnish:
- Thin lemon slices  
- Cherry tomatoes, halved and sautรฉed in 1 tsp olive oil  
- Brunoise-cut tomato (skin removed)  
- Fresh parsley, finely chopped  
- Edible flowers (optional)

๐Ÿ‘จ‍๐Ÿณ Steps  

Sear fish 3–4 min/side. Sautรฉ aromatics. Add wine, reduce. Stir in cream mix, simmer 5 min. Plate & garnish ✨

Instructions

1. Sear the Snapper:
- Pat fillets dry. Season with salt, pepper, and smoked paprika.  
- Heat olive oil in a nonstick skillet over medium-high.  
- Place fillets skin-side down. Press gently for even crisping, 3–4 minutes.  
- Flip and cook flesh-side for 2 minutes. Transfer to a warm plate.

2. Make the Sauce:
- In the same skillet, melt butter. Sautรฉ shallot, garlic, bell pepper, and celery for 3 minutes.  
- Stir in seasoning, then deglaze with wine or stock. Simmer until reduced by half.  
- Lower heat; add cream, mustard, Worcestershire, and lemon juice. Simmer 5 minutes until slightly thickened. Season to taste.

3. Plate with Elegance:
- Spoon a modest amount of sauce onto plates.  
- Place snapper skin-side up atop the sauce.  
- Garnish with lemon slices, sautรฉed tomatoes, brunoise tomato, parsley, and edible flowers.
