CRISPY ONION RINGS:

1️⃣ Soak Onion Rings:

- Place onion rings in buttermilk for at least 30 mins.


2️⃣ Prepare Batter:

- In a bowl, whisk flour, cornstarch, baking powder, salt, and pepper.  

- Gently stir in cold soda water + beaten egg. Don’t overmix — lumps = crispiness!


3️⃣ Fry the Cod:

- Lightly coat cod in flour.  

- Dip into batter, let excess drip off.  

- Fry at 350°F (175°C) for 4–5 mins per side until golden-brown. Drain on paper towels.


4️⃣ Fry the Onion Rings:

- Drain onions. Toss in seasoned flour mix.  

- Fry at 350°F (175°C) for 2–3 mins until crispy and golden.
