For the squid:

  • 4 medium whole squid (cleaned, tubes and tentacles separated)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped

  • ¼ cup chopped parsley
  • ¼ cup chopped dill or mint

For the tomato sauce:

  • 1 cup chopped tomatoes (fresh or canned)
  • ½ cup white wine (or vegetable broth)
  • 1 tsp honey or sugar
  • ½ tsp red pepper flakes (optional)

1️⃣ Make the stuffing:
Heat 1 tbsp olive oil in a skillet. Sautรฉ onion and garlic until soft. Finely chop squid tentacles, add to the pan, and cook 2–3 mins. Remove from heat and mix in rice, herbs, spices, and feta (if using). Season to taste.

2️⃣ Stuff the squid tubes:
Fill each tube gently with the mixture—don’t overfill as squid shrinks during cooking. Seal open ends with toothpicks.

3️⃣ Cook the squid:
Heat the remaining 1 tbsp olive oil in a pan. Sear stuffed squid for 1–2 mins per side until lightly golden. Add tomatoes, wine, honey, and chili flakes. Cover and simmer on low heat for 20–25 mins, until tender.
