Classic Crab Salad

Ingredients:
* 450 g (1 lb) imitation crab meat (or real lump crab), chopped or shredded
* 120 ml (½ cup) mayonnaise
* 1 celery stalk, finely diced
* 2 green onions, thinly sliced
* 1 tsp Dijon mustard (optional, for tang)
* 1 tsp lemon juice (fresh is best)
* ½ tsp Old Bay seasoning or paprika
* Salt & pepper to taste
* Optional: 1–2 tbsp fresh dill or parsley, chopped
Instructions:
* Prepare the crab: Chop or shred the crab meat into bite-size pieces.
* Mix: In a large bowl, whisk together mayonnaise, lemon juice, Dijon mustard (if using), Old Bay, salt, and pepper until smooth.
* Add veggies: Stir in the finely diced celery and green onion.
* Combine: Gently fold in the crab meat until it is well coated.
* Chill: Cover and refrigerate for at least 30 minutes to let the flavors blend.
* Serve: Enjoy it on its own, on toast, in rolls, or with crackers.
Optional Add-Ins: Diced cucumber, bell pepper, sweet relish, or chopped hard-boiled eggs. A dash of hot sauce adds a nice kick!
