• 4 salmon fillets (150g each)
• 2 tbsp olive oil (30ml)
• 1 small onion, chopped (150g)
• 2 garlic cloves, minced
• 1 tbsp fresh ginger, grated
• 1 tbsp red curry paste
• 1 can coconut milk (400g / 14 oz)
• 1 tbsp soy sauce
• 1 tbsp lime juice
• 2 cups broccoli florets (150g)
• Salt & pepper to taste
• Fresh coriander or parsley (for garnish)

1️⃣ Sear the Salmon – Heat olive oil, season the salmon, and sear until golden (4–5 mins/side). Set aside.
