🌿 Ingredients:
- 1 medium cauliflower, cut into florets
- 200g paneer, cubed
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tsp curry powder (mild or hot)
- ½ tsp turmeric
- ½ cup double cream (or coconut cream)
- ½ cup grated Gruyère cheese (or mature Cheddar for a UK touch)
- ¼ cup grated Parmesan
- Salt & black pepper
- Fresh coriander + parsley, chopped (for garnish)
🔥 Instructions:
1️⃣ Roast cauliflower florets with olive oil, salt, and pepper at 200°C (400°F) for 12–15 mins.
2️⃣ In a skillet: melt butter, sauté garlic, curry powder + turmeric. Add cream + half the Gruyère. Stir into a smooth sauce.
3️⃣ Add roasted cauliflower + paneer to the skillet, coat well.
4️⃣ Transfer to baking dish, sprinkle with Gruyère + Parmesan.
5️⃣ Bake 8–10 mins until golden and bubbly.
6️⃣ Garnish with coriander + parsley. Serve hot!
