4 white fish fillets (cod, sea bass, tilapia, or your favorite)

1 zucchini, thinly sliced

1 yellow squash, sliced

1 cup cherry tomatoes, halved

1 red onion, sliced

1 lemon, thinly sliced

3 tbsp olive oil

3 garlic cloves, minced

1 tsp dried oregano

1 tsp paprika

Salt & pepper, to taste

Fresh parsley or dill, for garnish

Optional: pinch of red pepper flakes for a little heat

Preheat oven to 400°F (200°C).

Arrange the fish fillets in a lightly greased baking dish.

Drizzle the mixture over the fish and vegetables.

Lay lemon slices on top of the fish for brightness and zest.

Bake uncovered for 18–22 minutes, or until the fish flakes easily with a fork and veggies are tender.
