Mozzarella Salmon Penne with Asparagus and Lemon Cream πŸŸπŸ‹πŸ§„πŸ§€πŸŒΏπŸ

Ingredients:


12 oz penne pasta


1 lb salmon fillet, skin removed, cut into chunks


Salt & black pepper, to taste


1 tsp garlic powder


1 tbsp olive oil


2 tbsp butter


4 cloves garlic, minced


1 bunch asparagus, trimmed and cut into 2-inch pieces


¾ cup chicken broth (or seafood stock)


1 cup heavy cream


Juice and zest of 1 lemon


1 cup shredded mozzarella cheese


2 tbsp chopped fresh parsley (plus more for garnish)


Instructions:


Cook the Pasta:

Boil penne in salted water until al dente. Reserve ½ cup pasta water, drain, and set aside.


Sear the Salmon:

Season salmon with salt, pepper, and garlic powder.

Heat olive oil in a large skillet over medium-high heat.

Cook salmon 2–3 minutes per side until golden and flaky. Remove and set aside.


Cook the Asparagus & Sauce:

In the same skillet, melt butter and sautΓ© garlic for 1 minute.

Add asparagus and cook 3–4 minutes until just tender.
