Seafood Linguine with Shrimp & Mussels


*Ingredients:*

- 250g linguine pasta  

- 200g shrimp (peeled & deveined)  

- 200g mussels (cleaned)  

- 1 cup cherry tomatoes (halved)  

- 3 garlic cloves (sliced)  

- 1 small red chili (optional, chopped)  

- 1/4 cup white wine (or seafood broth)  

- 3 tbsp olive oil  

- Fresh parsley (chopped)  

- Salt & black pepper  


*Instructions:*

1. Cook linguine in salted water until al dente. Drain and reserve 1/2 cup pasta water.

2. In a large pan, heat olive oil over medium. Sauté garlic and chili until fragrant.

3. Add shrimp, cook 1–2 min per side. Add mussels and pour in wine.

4. Cover and cook until mussels open (about 3–4 min).

5. Add cherry tomatoes, season with salt and pepper, and cook 2 min.

6. Toss in drained pasta, add a splash of pasta water, mix well.

7. Top with fresh parsley and a bit of grated parmesan (optional).
