๐ Ingredients
For the Stew:
๐ธ 2 tbsp olive oil
๐ธ 1 medium onion, chopped
๐ธ 2 celery stalks, chopped
๐ธ 1 tbsp minced garlic
๐ธ 1 tsp red pepper flakes
๐ธ 1/4 cup tomato paste
๐ธ 1 can (800 g) crushed tomatoes
๐ธ 4 cups fish broth
๐ธ 2 tbsp lemon juice (wine substitute)
๐ธ 1/2 cup sliced Kalamata olives
๐ธ 2 tbsp capers
๐ธ 1 bay leaf
๐ธ 3 thyme sprigs
๐ธ 2 cups cooked orzo
๐ธ 2 lbs white fish fillets (cod, halibut, pollock), cut into 2-inch pieces
๐ธ Salt & pepper to taste
For the Herb Oil:
๐ธ 1/4 cup olive oil
๐ธ 2 garlic cloves, crushed
๐ธ 1/4 cup finely chopped parsley
๐ธ 2 tbsp finely chopped basil
To Serve:
๐ธ 1/2 cup grated Parmesan cheese
๐ธ Crusty bread
๐จ๐ณ Instructions
1️⃣ Sautรฉ the Base
➖ Heat 2 tbsp olive oil in a large saucepan over medium-high heat.
➖ Sautรฉ onion & celery for 7–8 min until softened.
➖ Add garlic & red pepper flakes, cook 1 min.
➖ Stir in tomato paste, cook 1 more min.
2️⃣ Simmer the Stew
➖ Add crushed tomatoes, fish broth, lemon juice, olives, capers, bay leaf, thyme, salt & pepper.
➖ Bring to a boil, then simmer gently for 30 min.
3️⃣ Make the Herb Oil
➖ Place parsley & basil in a bowl.
➖ Heat 1/4 cup olive oil with crushed garlic until golden.
➖ Pour hot oil over herbs, let cool.
4️⃣ Add Fish & Orzo
➖ Stir in cooked orzo & fish.
➖ Simmer 5 min until fish is cooked through.
➖ Adjust seasoning.
5️⃣ Serve
➖ Ladle into bowls, drizzle with herb oil.
➖ Sprinkle Parmesan, serve with crusty bread.
