๐ Ingredients:
– 1 lamb shoulder (4–5 lb = 2-2.5 kg/ bone-in)
– 6 garlic cloves, minced
– 2 tbsp Dijon mustard
– 2 tbsp whole grain mustard
– 3 tbsp honey
– 1 tbsp fresh rosemary, finely chopped
– 1 tbsp fresh thyme leaves
– 1 tsp black pepper
– 2 tsp sea salt

1️⃣ Preheat oven to 300°F (150°C).
2️⃣ Rub lamb with garlic, rosemary, thyme, salt, and pepper. Place in roasting pan.

4️⃣ Mix Dijon, whole grain mustard, and honey. Brush glaze over lamb.
5️⃣ Increase oven to 425°F (220°C) and roast uncovered for 15–20 minutes until caramelized.
